Principal Accountabilities
Flight & Schedule Monitoring

Liaise with production, Customer account managers, and supervisors to communicate schedule changes.
Meal Count Management
Record and update meal count totals per flight.
Confirm final meal counts against airline specifications and client requirements.
Adjust figures promptly for last-minute changes to avoid under- or over-catering.
Billing & SAP Transactions
Process and confirm flight billing in SAP according to agreed contractual terms.
Ensure all flights are billed accurately and timeously, reconciling discrepancies with operations and finance.
Maintain accurate records of billed and unbilled flights for reporting purposes.
Coordination & Communication
Act as a liaison between operations, production, and logistics to ensure correct information flows between teams.
Support the Operations Team Leader with operational data and reports.
Compliance & Data Integrity
Maintain accurate and up-to-date operational records in SAP in compliance with internal controls.
Adhere to Security, SHEQ, HACCP, and operational policies and procedures in all planning and system activities.
Reporting
Compile and submit daily, weekly, and monthly reports on flight schedules, meal counts, and billing.
Highlight operational trends, irregularities, and areas for improvement.
Ad Hoc Duties
Assist with month-end stock take and related SAP capturing.
Perform any reasonable duties as instructed by the Operations Team Leader.
Qualifications & Experience
Matric (Grade 12) – Essential
Diploma or Certificate in Operations, Logistics, Supply Chain, Business Administration, or related field
Minimum 3 -5 years’ experience in an operations, planning, scheduling, or administrative role, preferably within: Aviation / In-flight catering or Logistics or FMCG
Proven experience working with daily schedules, volumes, and deadlines
Knowledge and Skills
Exposure to flight schedules, meal planning, or billing processes – Advantageous
SAP Experience- Essential
Proficiency in Microsoft Office Skills (Word, Excel, PowerPoint)

Job Purpose
The Stock Controller will be responsible for ensuring effective stock control, accurate inventory management, and uninterrupted supply of food items to production. The role focuses on maintaining optimal stock levels, minimizing wastage, ensuring FIFO compliance, and supporting operational and audit requirements through accurate SAP transactions and reporting.

Principal Accountabilities
Stock Control & Inventory Management

Conduct daily, weekly, and monthly stock takes to maintain stock par levels.
Record and verify daily opening and closing stock balances.
Perform monthly stock counts and reconcile variances timeously.
Investigate stock discrepancies and implement corrective actions to ensure inventory accuracy.
Apply and enforce FIFO principles at all times.
Requisitions & SAP Processing

Create requisition orders on SAP in line with menu specifications and operational requirements.
Ensure all requested Purchase Orders are created by Procurement with correct quantities before shift end.
Verify internal orders before they are processed and transferred to relevant departments.
Ensure stock is transferred on SAP after picking.
Submit daily requisitions to Buyers to ensure suppliers attend on time.
Wastage & Expiry Control

Minimize wastage by monitoring and recording 24hr, 48hr, and 72hr stock nearing expiry.
Communicate expiring stock timeously to the Food Stores Team Leader and General Manager Operations.
Flag stock shortages, overstocking, expired and non-moving items daily.
Report non-moving stock to the Food Stores Team Leader with recommendations.
Operational Support

Ensure food stores production schedules are met daily, weekly, and monthly.
Communicate shortage lists (balance to follow) to relevant departments timeously.
Maintain a convenient store layout ensuring correct quantity, quality, and accessibility of products.
Analyse historical stock data for forecasting and planning purposes.
Compliance, Housekeeping & Audits

Maintain good housekeeping standards in line with HACCP requirements.
Ensure compliance with health, safety, and inventory control standards.
Assist with inventory reporting and support internal and external audits.
Participate in food stores management meetings and contribute to continuous improvement initiatives.
Stakeholder Communication

Communicate effectively with internal stakeholders including Procurement, Production, and Operations to ensure efficient stock management and uninterrupted service delivery.
Qualifications & Experience
5 – 7 years’ experience in a warehouse environment.

Principal Accountabilities
Leads and supervises a team of chefs and kitchen assistants

Monitors raw product yields regularly to ensure maximum product output according to raw material specifications and service level agreements with suppliers
Places stock orders on time using system-generated data
Interprets recipes to support bulk production in accordance with approved specifications
Leads daily tastings and compliance checks on portioning, plating and presentation
Ensures that all extras are signed off and handed over correctly to the uplift team
Implements effective stock rotation / stock management, stock takes and system requirements such as stock reservations, stock reconciliations and product confirmations
Liaises with Quality Control and Stores to manage expiry dates and ingredient usage
Reports deviations in line with approved procedures and ensures resolution thereof
Conducts investigations into customer complaints received and responds promptly to customer queries and complaints
Completes and submits all CCP documentation to Quality Assurance at the end of each shift
Monitors adherence to SHEQ systems and policies
Monitors and ensures full compliance with operational, safety, hygiene and security procedures
Enforces the use of hygiene practices and protective gear at all times
Participates in internal and external food safety audits and provides feedback on non-conformances
Conducts investigations into all safety incidents and ensures that all incidents are reported, documented and addressed in accordance with Air Chefs’ protocols
