- Experience: Minimum 2 years’ experience as a blockman in a butchery
Responsibilities
- Record quantity of meat received and issued to cooks or keep records of meat sales.
- Perform precise and cost-effective cutting of various meat species, employing advanced deboning and cutting methods to achieve maximum output.
- Process/manufacture a variety of processed meat products including sausages, minces, etc
- Operate a bandsaw and other specialized butchery equipment with proficiency
- Controls and maintain cold chain principles and ideal temperatures for storing meat products
- Maintain and comply with relevant food safety and meat legislation
- Perform block tests to determine costs
- Production planning to maintain ideal stock levels of unprocessed stock and retail cuts
- Maintain a clean and hygienic work area
- Ensure equipment remains clean and in good working condition
- Assist in managing waste and shrinkages in the department in line with budget
- Assist with weekly stock takes in the butchery
- Efficiently communicate with colleagues and customers using strong communication and time management skills to improve workflow.
- Maintain awareness of all promotions and advertisements
- Possess detailed knowledge of butchery retail cuts, value-added products, and all meat species
- Stay informed about current butchery trends and innovations
- Maintain a positive attitude and foster a collaborative work environment
- Demonstrate a trainable mindset and willingness to adapt to new techniques and processes
- Maintain high energy levels and the ability to work effectively under pressure

A blockman will be responsible for cutting meat products to quality standards according to the production plans. This position reports directly to the Butchery Manager and will be required to work different shifts across trading and non-trading hours, including Sundays and Public Holiday.
